Coming in hot! Clean, protein rich truffles to treat yourself on Valentine’s Day.
These truffles are loaded up with heart healthy fats, fiber and antioxidants which make them a nice treat any day of the year but especially so when paired with a little red wine and romance.
Chia Seed Chocolate Truffles
1 Cup Rolled Oats (Gluten Free)
20 Pitted Dates
2 Tbsp Coconut Oil
2 Tbsp Brown Rice Syrup
3 Tbsp Chia Seeds
1 Tsp Vanilla Extra
1 Tsp Fine Sea Salt
1 Tbsp Vanilla Almond Milk
Pulse all ingredients together in a food processor until well blended (see photo below). Feel free to add more almond milk if the mixture is too dry. It should be crumbly but able to stick together when pressed. Once desired texture is achieved, roll into 1-inch balls and place on parchment paper and allow to chill in the freezer to set up for about an hour.
Chocolate Coating
½ Cup Plant Based Chocolate Chips (I like sunspire)
½ Tsp Vanilla Extract
1 Tbsp Coconut Oil
1 Tsp Fine Sea Salt
In a double boiler melt the chocolate and mix in remaining ingredients.
Next take the truffle balls out of the freezer and roll in the chocolate, placing onto parchment paper once dripped. Top with some flaked sea salt and allow to chill in the refrigerator for about 2 hours (If you can wait that long).
