In the hot summer months we can always count on cucumber to cool us off. Its hydrating, light and super refreshing.
This recipe isn't a salad in the strictest of senses, more a method of preparing a simple vegetable dish when its too hot to move around in your kitchen let alone turn on the oven.
This pairs well with seafood, or veggie sushi but its also super delicious on its own as an easy, balancing, summer afternoon snack.
Cooling Cucumber Salad
1 english cucumber or 4 - 5 persian cucumbers
1 tbsp toasted sesame oil
2 tbsp rice or champagne vinegar
pinch of salt and pepper
toasted sesame seeds
Mix everything together in a large bowl and enjoy.
