Breakfast is why I get up early.
Okay, not really but this overnight oats bowl is AMAZING. It toes the line of dessert and breakfast quite well. And lets be honest, we all want more things to taste like dessert.
The cherry chia seed jam is filling and energizing and the light salt in the overnight oats is nicely balanced with the honey, cinnamon and chopped nuts. Everything about this bowl is simple, you just have to remember to put the oats in the refrigerator the night before.
Overnight Oats with Cherry Chia Jam
1 cup gluten-free rolled oats
3/4 cup unsweetened vanilla almond
a pinch of cinnamon
a pinch of sea salt
Mix everything together and place the mixture in an airtight jar and place in the refrigerator overnight.
Cherry Chia Jam:
16 oz frozen pitted cherries
1/8 cup granulated sugar
2 tbsp raw honey
1/4 cup chia seeds
In a medium saucepan, bring the cherries and sugar to a simmer for about ten minutes, stirring constantly so the cherries don't burn. Next, add the chia seeds and simmer for another ten minutes. Remove from heat, let cool and store in the refrigerator.
To assemble, put the overnight oats in a small bowl and place the cherry chia jam on top. Add in some chopped walnuts, or pecans and a splash of almond milk.
