Pumpkin Donuts


Have you ever heard someone say, "I don't really like donuts" ?! Me either. I don't think they exist.


These donuts are just about as comforting to make as they are to eat, and since they're a "clean" take on a typical donut, your body will be happy (and so will your kitchen because these smell amazing when they're in the oven).


I see no downsides here.


But if you need some extra incentive to popping these in your oven, here are some health advantages to eating pumpkin:

- They're loaded in Vitamin A (hello healthy vision)

- They're rich in antioxidants (hello glowy skin)

- They're high in Vitamin C (hello cold season defense)


 


Pumpkin Donuts

-1/2 Cup Pumpkin Puree

- 3/4 Cup Almond Milk

- 2 Tbsp Coconut Oil

- 1 Tsp Vanilla Extract

- 1 Cup Oat Flour

- 1 Tsp Baking Soda

- 1/2 Cup Sugar

- 1 Tsp Pumpkin Pie Spice

- 1 Tsp Ground Cinnamon








Preheat oven to 350. Mix wet ingredients together in a large bowl and then fold in dry ingredients. Fill donut pan with batter and bake for 12-15 minutes or until tops turn golden brown. Roll in cinnamon/ sugar, maple sugar or coconut sugar and serve.
