More summer foods coming at ya!
I love anything lemon but its the apricots that really make these bars unique.
In addition to being high in antioxidants, these squares are loaded with healthy fats and plant-based proteins, they are high in fiber and low in sugar so, in addition to tasting like summer, they’ll compliment your summer body nicely as well.
Think of these as like an ultra-gooey super-food granola bar that is just sweet enough that it could also pass for dessert.
Raw Lemony Apricot Squares
20-23 Dried Turkish Apricots
½ Cup Shredded Coconut
¼ Cup Oats
¼ Cup Walnuts
¼ Cup Almonds
2 Tbsp Coconut Oil
1 Pinch Sea Salt
1 Tbsp Chia Seeds
1/8 Cup Maple Syrup or Honey
Pulse all ingredients except for lemon zest, hemp seeds and coconut sugar into a food processor until slightly gummy texture appears.
Spread into a glass baking dish, lined with parchment paper. Use a smaller dish if you like thicker squares or larger dish if you like thinner squares.
Sprinkle mixture with shredded coconut, hemp seeds, coconut sugar (or other unprocessed sugar of your choice and the zest of one lemon and press into the top of the squares.
Chill in the refrigerator for 3 hours prior to cutting and serving.
