Supercharged Healing Bowl



For those das when you're just feeling a little depleted, this rice bowl is a quick and easy way to steep your body in some deep nutrition.


The iron rich kale and quinoa will give you a little energy boost by stimulating red blood cell production. The potassium and beta carotene in the carrots and broccoli will help to stabilize internal hydration and promote detox on a cellular level. And the complex carbohydrates and fiber in the brown rice and quinoa will help keep you fuller, longer, providing even, sustained energy levels.


Also, steaming your veggies helps to ensure that the nutrients stay intact throughout the cooking process, thus maximizing the nutrients entering your bloodstream.



 
Supercharged Healing Bowl

(Serves Two)


Bowl:


1/2 cup cooked brown rice

1/2 cup cooked quinoa

1-2 cups kale (chopped)

1 cup shredded carrots

1 cup baked tofu

1 tbsp nutritional yeast

slivered almonds


Sauce:

1 small shallot

1/4 cup olive oil

2 tbsp rice vinegar

2 tbsp fresh grated ginger

2 tbsp soy sauce

1 tbsp tahini

1 tsp honey

2 tbsp filtered water

1 clove minced garlic

1 tsp dijon mustard



For the sauce, put everything into a high speed blender and blend until well mixed. Set aside.


For the bowl, mix the quinoa, brown rice and nutritional yeast in a bowl together and set aside. Steam the kale and carrots until fork tender (roughly ten minutes or so). To assemble the bowl, start with the rice mixture, top with the steamed veggies and tofu, and pour the desired amount of sauce over the top. Sprinkle with the almonds and more nutritional yeast to serve.
